Uses:
It is found in ingredient labels of baked products, aloe vera products, processed cheeses & cheese products, salad dressings, bakery products, prepared salads, fermented vegetable products, dried fruits, fruit juices, margarine, fish products. Due to its action on yeast is known to have a major role in wine making. Potassium sorbate stock solutions of 10% to 20% have been known to be used for direct addition to beverages and pickled products and for spray and dip applications to cheese, dried fruits and smoked fish. Potassium sorbate is used particularly in foods that are stored at room temperature or that are precooked, such as canned fruits and vegetables, canned fish, dried meat, and desserts. The amount of potassium sorbate generally known to be added to processed food products is from 0.025% to 0.1%.
